Master butcher Thomas Koch checks the maturing of his "Ahle Wurst" sausages

Thomas Koch is Germany's most famous traditional Ahle Wurst producer. Ahle Wurst (or Ahle Worscht) is a kind of Hessian hard pork sausage and a popular dish in northern Hesse, central Germany. Its name is a dialectal form of "alte Wurst" – "old sausage". Around 35 tons of different sausages mature in Koch's 600 sqm "sausage sky".
