The powder is used in many northeastern Thai recipes, particularly local dishes of minced pork, fish or chicken that are collectively known as larb. -- The northeast of Thailand, whilst being the major rice growing region of the country, is also the poorest. Villagers life for many revolves around a daily existence of finding food for the next meal and escaping the searing midday heat.
