St. George is the most revered military saint throughout the Christian world. Because of his wide renown, there are many different accounts of his life and martyrdom. His most well known exploit involved slaying a dragon that had been threatening a pagan town. In the process, he rescued a princess, who had been offered to the monster as a sacrifice.
